Today is blackberry day. I just woke up craving blackberries. Why aren’t blackberry cakes so popular around?

If you ever crave a fruit cake that is just easy to make and delicious then I recommend this Blackberry Cake Recipe. It truly is soft, light and perfect.

As usual, baking is a passion that I enjoy exploring and trying. And so whenever I crave something, I look up for Recipes and I meet new food bloggers who share delicious recipes. And so for this great recipe, I was lucky to find a recipe that was easy and tasted great.

As for my photography, it is another hobby that I enjoy doing. It is away to explore myself along with design and styling. It gives me a sort of meditative reward. Where after baking, I just completely zen into food art and photography.

This cake would go perfect after a yummie Middle Eastern Spinach Pastry.

Here is the Recipe of Blackberry Cake topped with almonds and sugar crust by Zuker Zimt und Liebe.

Ingredients 

1 stick of butter

1 cup of sugar

2 eggs

Pinch of salt

1 teaspoon of vanilla

1 cup of all purpose flour

10-15 fresh blackberries

A hand full of sliced almonds

١ قالب زبدة كامل

١ كوب سكر

٢ بيض

رشة ملح

١ معلقة صغيرة من الڤانيلا السائلة

١ كوب طحين

١٠-١٥ توت أسود بري طازج

كمشة إيد من لوز مقطع

How to make the most delicious blackberry cake

Recipe

  1. Preheat the oven to 350 degrees and prepare your baking pan
  2. Melt your butter and set aside
  3. In a medium bowl, add the sugar, eggs and mix very well with a whisk. Add the salt and vanilla and the flour and stir again.
  4. Add the melted butter and mix very well to have a very nice smooth dough.
  5. Add your ready dough into your pan.
  6. In a small bowl, add your washed blackberries along with 1 table-spoon of flour to coat your blackberries slightly with flour.
  7. Add your blackberries to your cake dough, along with the sliced almonds and sprinkle the cake dough with 2 tablespoons of sugar.
  8. Leave 30-40 minutes to bake, check your cake with a toothpick before turning your oven off.

الطريقة

١- تحضير الفرن الى ٣٥٠ درجة و تحضير قالب الكيكة

٢- تذويب الزبدة، ثم الوضع على جنب لتبرد

٣-في وعاء متوسط الحجم، خفق السكر مع البيض لمدة ٣-٥ دقاءق، ثم إضافة الملح و الفنيلا الساءلة، ثم الطحين و التحريك و الخلط مرة أخرة

٤- إضافة الزبدة و الخلط لوجود عجين الكيكة جاهزة في شكل طري

٥- إضافة العجين في قالب الكيك

٦- في وعاء صغير، ضعي التوت الاسود مع معلقة كبيرة من الطحين و تحريك

٧- إضافة التوت و الوز فوق العجين ثم رشة ٢معلقة سكر فوق العجين كامل

٨- إضافة قالب الكيك في الفرن لمدة ٣٠-٤٠ دقيقة، و التأكد من الطهي قبل إزالت القالب من الفرن
